Reserve the remaining syrup you can use for breakfast cocktails, desserts, or for additional servings of the drink.
Bikini Recipe
Makes enough for 10 people
For the Citrus Syrup (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Premix (makes 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch
Method
For the Cordial: Put every ingredients inside a saucepan, bring to a light boil, agitating so the sugar melts. After that, take off the burner allowing it to reach room temperature entirely. Pour into an sealable bottle, close it and refrigerate it chilled, where it will keep for up to a month.
To make Premix: Mix the specified spirits and syrup in a large bottle, leave to sit for one hour, then pass it through , ideally through a fine cloth, to ensure it's fully clarified.
For serving: Pour 85ml of your premix into a cocktail shaker containing ice, and agitate lightly for about 60 seconds to chill. Strain into an chilled martini glass or a similar vessel, garnish with a few cranberries and finish using a brief mist of the essential oil over the drink.
